Our local Hida Takayama region surrounded by mountains is attractive throughout the year, featured by beautiful seasonal colors of the four seasons and abundant and excellent sightseeing spots such as Old Town with ancient and traditional atmosphere called as “Little Kyoto of Hida”, Miyagawa Asaichi morning market, Takayama Jinya, and Kusakabe Mingeikan, as well as Takayama-Matsuri Festival, the largest event in Takayama.

Hida Takayama is the heaven for gastronomists with varieties of delicious ingredients, including Hida Beef, edible wild vegetables in spring, sweetfish in summer, mushrooms in autumn, and wild meats in winter, as well as with varieties of fresh delicious seafood from, in favor of its location close to, the Sea of Japan.

Ingredients delivered every day, especially wild ingredients which we stick to use.
Taste produced with Hida’s clear water and high-quality rice.
Specially delicious meals, enjoyable just in favor of our location in Hida surrounded by mountains.

It has always been our priority to make our guests feel happy. Keeping it in our mind, we, Matsuki Sushi, are making best efforts, together with my father, to be such restaurant.

My grandfather, originally coming from a family of a master of fishermen in Himi, Toyama prefecture, moved in Hida Takayama and newly started a fish shop for local people living in mountainous region to enjoy taste of fresh delicious fish.
The fish shop was converted into a sushi restaurant by my father following the intention of my grandfather. Today, we, the father and the son, are operating it aggressively.

I remember well of a young sushi chef whom I met at a restaurant during my trip when I was a child. Beside the good taste of his cook,
he made delicately nigiri sushi for me explaining details about each piece to me, though I was a child, This warm scene still deeply remains in my memory. That's why I decided to be a sushi chef.

Following my father’s belief “It's natural to serve delicious sushi for a high price. We serve delicious sushi for a reasonable price affordable for young couples and families”, all members of our restaurant are making best efforts to be a “Memorable Sushi Restaurant”.

Certainly, Takayama surrounded by mountains is blessed
with varieties of seasonal ingredients from the mountains.
All the ingredients produced from magnificent nature is
impressively delicious. Actually, Takayama has covert
specialties.
That are ingredients from the sea.
Despite the location of Takayama surrounded
by mountains, Takayama is in the good location
close to Toyama and Kanazawa and thus variety of
fresh ingredients from the sea, namely the Sea
of Japan,can be directly delivered every day
from such coastal cities. Surprisingly quick delivery
of fresh seafood!That is why seafood is the covert
specialties of Hida Takayama.

We are confident in judging and selecting fresh seafood
because our shop Matsuki Sushi was originally started
from a fish shop. We use only carefully selected ingredients
for our dishes and thus freshness is guaranteed.
